Matt CHAPTER ONE
Course: Pro Barista

We were total novices & needed training from the ground up. We spent a full day going through all the fundamentals of brewing coffee on a commercial espresso machine & why they matter. We also tasted loads of coffee & discussed how the brewing process can effects the final taste of the drink a very hands on course & learnt loads would highly recommend.

I felt that Josh did an excellent job of tailoring the training to our needs and prior experience. I learned a lot of new things, and I now better understood some thing that I thought I already knew.
Particular highlights:
* Looking at the differences between washed, honey and natural processing and the effect on the green beans and the roasted beans.
* Espresso brewing. How to tell the difference between under, over and correctly extracted shots. How to prep the basket with minimal steps to get a good result. How to judge if the basket has correct dose and how to judge the quality of a shot.
* Milk preparation. How to get the basics of milk steaming. I've been practising what I learned and I'm now getting much better at it.
Josh and Trev also gave me plenty of really useful advice about my plans to set up a coffee cart. It's great to get these insights from people who know the industry.

From the first min to the last was treated exceptionally well. Very friendly and welcoming atmosphere. Loved the mix of theory and 121 training/feedback and coaching to real time ‘on the job’ experience. Josh is able to mix genuine knowledge and experience with a calm and reassuring manner that makes learning fun. When working the shop he was brilliant and judging when to give me time and space to do the work…and yet I knew he was listening, making sure I was/all was ok. Highly recommend it!

I would like to thank you and Josh for a most fantastic 3 days. The enthusiasm and knowledge from Josh made it so interesting, being a complete novice Josh pitched it just right and I was hooked. The hands on training was also perfect, loved seeing the passion from your regular customers and having the chance to make the variations you offer. I have tried to think of constructive feedback in what you could include or miss out, but, for me it exceeded expectation.

Relaxed, informative, good pace. We have been able to enjoy improvement in a coffee we thought was ok and finally been able to adjust so that your Dark Peak is delicious - we had given up in the particular coffee as we couldn't get it right in our machine which was a shame because it was always a favourite.

Attended the Barista's course with my daughter who is looking to find work in this area. It was a very enjoyable day and we has a positive learning experience. The course starts from explaining where the beans come from to serving up a latte and everything in between. Josh was very knowledgeable and never failed to answer any of our questions. Would recommend.

Josh described various stages of coffee very well and clearly enjoyed talking about his experience and knowledge of coffee. At the end of the day we could do some latte art (mine was somewhat primitive) but my favourite of the day was how he taught the dialling in process. He was friendly and clear. It was fun.

After the course we were all following the same process, preparing all the different drinks the same & had improved our milk steaming technique & espresso brewing across the board.

I attended a 'Brew Better Coffee at Home' course at Smith St. I got a Sage Barista coffee machine as a present & have also enjoyed brewing on a V60 as well for a number of years & wanted to improving my coffee brewing skills & understand the process of brewing coffee better. the course content was great we covered every aspect of coffee brewing in great detail & also practise our espresso & filter brewing technique loads

The course was detailed while still being beginner friendly and well paced. Josh especially was really knowledgeable and passionate. He was a great teacher and was able to adapt easily to suit our different learning styles and skill levels. I had a great time!
